What is gluten?

When ingested by a person with celiac disease, gluten triggers an immune response that attacks the small intestine, damaging the body’s ability to absorb nutrients.

Foods that are common sources of gluten include pastas and noodles, wheat bread, processed lunch meats, potato chips, granola bars, pancakes, and cookies.

To avoid foods that contain gluten, make a habit of reading food labels before purchasing food items. It’s also helpful to remember that fresh fruit and vegetables, meat, poultry, fish, cheese, and eggs are naturally gluten-free, so use build your meals around those ingredients.
